Double Choc Chip Cookies Recipe- Pinch Of Nom

I recently baked some double choc chip cookies using a Pinch Of Nom recipe. The recipe will be linked here if you are interested in saving it. I will explain what I did below however this is NOT my recipe. Please follow the link to get the full recipe from Pinch Of Nom.


  • Flora Light
  • Granulated Sweetener (approx 9 tablespoons)
  • 2 Eggs
  • Vanilla Extract
  • Coconut Flour
  • Salt
  • Chocolate Chips
  • Baking Soda
  • Cocoa Powder

When I made the cookies I did not put salt in. Also Pinch Of Nom recommend you use a granulated sweetener however I just had regular sweetener so I used about 3 tablespoons instead; not sure if that was too much or not enough.


The first step is to preheat your oven to 180 °C

I mixed the butter and sweetener together using my gourmet stand mixer by Keenox. I always wanted a stand mixer and when we moved into the flat our landlord gave me this; it is a really good mixer. Then I added both eggs to the mix one at a time. After that I then added the rest of the ingredients to the bowl. The mixture thickened up a lot at this step. To ensure all the ingredients where combined I switched to using a spoon instead of the mixer. Once all of the ingredients were mixed in I added the chocolate chips; I used milk chocolate and white chocolate chips.

The recipe does say to let the mixture stand for a minute ” so the flour absorbs the moisture and becomes a dropping consistency” I did not do this which is why mine probably turned out the way they did.

I lined a baking tray with baking powder and rolled bits of the mixture into ball shapes. I placed each one equal (ish) distance apart on the trays. There should have been enough mixture for 18 cookies but I only manage to make 12. I let them cook in the oven for around 12 minutes.

Unfortunately I actually was not a big fan of the cookies; I found the texture to be a bit strange. They were hard on the outside likes cookies should be but the inside was more like cake. I think that would probably be something I did wrong. Joe and his family seemed to really like but personally I was not a fan.

I am going to try making these again but this time actually follow the recipe properly. Hopefully then they will turn out a better.
